Roasted Red pepper & Tomato soup


INGREDIENTS

  • 6 LARGE RIPE TOMATOES
  • 3 RED BELL PEPPERS
  • 1 CUP OF FRESH BASIL
  • SALT
  • PEPPER


DIRECTIONS

BLANCH TOMATOES IN BOILING WATER FOR A COUPLE OF MINUTES AND REMOVE SKINS

ROAST RED PEPPERS IN A 400 DEGREE OVEN UNTIL SKIN IS DARK

REMOVE SKINS FROM PEPPERS

PLACE ALL INGREDIENTS IN A BLENDER OR FOOD PROCESSOR AND PUREE

COOK SOUP ON LOW TEMPERATURE UNTIL SOUP REACHES 160 DEGREES

GARNISH WITH SOUR CREAM AND FRESH PARSLEY OR DRIED CHEESE CURDS OR CROUTONS
