Minnesota Wild Rice Soup


Ingredients

  • 6 tablespoons butter
  • 3 tablespoons minced onion
  • ½ cup flour
  • 3 cups chicken broth
  • 2 cups wild rice, cooked
  • 1/3 cup cooked chicken, diced
  • ½ cup carrots, finely diced
  • ½ cup sweet red peppers, finely diced
  • 3 tablespoons almond slivers, chopped
  • ½ teaspoon salt
  • 1 cup half & half
  • 2 tablespoons dry sherry
  • Snipped chives (for garnish)

Instructions

Melt butter in saucepan; saute onion until tender. Blend in the flour; gradually stir in broth. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir 1 minute. Stir in wild rice, ham, carrots, almonds, and salt; simmer about 5 minutes. Blend in half & half and sherry; heat to serving temperature. Garnish with chives.
