Mexican Cornbread


Ingredients

  • 1 cup corn meal
  • ½ cup flour
  • 1 ½ Tbs baking powder
  • ¾ tsp salt
  • 3 eggs
  • 1 cup buttermilk
  • ½ cup green peppers, chopped
  • 2/3 cup vegetable oil
  • 1 cup cheddar cheese, grated
  • 1 tsp cayenne pepper
  • 1 can cream style corn
  • 1 can Mexicorn (drained)
  • 1 onion chopped


Instructions

Place half (or 1/3 cup) of oil in glass 13x9x2 baking dish. Heat in oven for about 5 minutes. Mix all ingredients together and place in baking dish with oil. Bake at 400 degrees for about 40 minutes or until slightly brown on top
